Selecting the Right Pancake Mix Ingredients

I wanted to make the best paleo pancakes I could. Finding Paleo substitutions to the pancake recipe ingredients was the first place to start.

Almond flour is one of the key ingredients in a lot of paleo cooking. It is basically just finely ground almonds. Not only does grinding the almonds make them a perfect flour substitute but anything baked with almond flour will be high in protein and fiber since almonds are naturally so nutritious (even more reasons to use it!).

While almond flour can pretty much just replace white flour in any recipe, you should expect a much more dense end product when baking with almond flour. You are, after all, replacing a wheat product with a heavy ground nut.

Replacing white flour seemed easy enough. Now onto assessing the other necessary pancake ingredients. Eggs are still okay on a paleo diet so there’s no need to find a substitute for eggs. Another easy paleo substitute was milk.

Hello almond milk! It’s my dairy free, delicious friend. Also, if you prefer coconut milk, this would work perfectly too. But then came sugar….what to do about sugar?

How to Make Paleo Pancakes

Traditional pancake recipes have plenty of white sugar, making them sweet, delicious but not so healthy. While honey and maple syrup are allowed on a paleo diet, I decided to make these easy paleo pancakes by using spices instead. I just used maple syrup to drizzle on top.

Salt, cinnamon, nutmeg and vanilla all sounded like great additions to this paleo recipe that would curb any desire for sugar. Not only would these additions bring more flavor to the paleo pancakes but vanilla is actually known to make things taste sweet without the calories. It’s better to freshly grind the cinnamonn and nutmeg for best results.

Since dairy products are usually not allowed on a Paleo diet, I started to do a little research on how to replace the butter in this paleo recipe and found a few interesting things about the Paleo community and its feelings toward butter.

Butter is, well, optional. Many say butter is fine to eat on a Paleo diet as it is made from natural milk. Others say the butter needs to be from only grass fed cows and then clarified to remove impurities before being considered Paleo. More people than not just say no to butter. It is dairy and therefore not allowed. In the end, I decided to forgo butter and used coconut oil instead.

So here is what I had:

  • White Flour → Almond Flour
  • Sugar → No Sweetener
  • Milk → Almond Milk
  • Butter → Coconut Oil

Now, I was ready! My family requested pancakes and I took out all my ingredients. Almond flour, eggs, almond milk, salt, vanilla and some spices from my rack- I was ready! I whisked(or you can use a hand mixer) the ingredients together, poured them into a hot pan and listened as they sizzled. A quick flip and the pancakes were ready and smelling delicious.

After devouring all of the first batch of paleo pancakes, these ‘new’ light and fluffy pancakes were a complete hit. This healthy breakfast will be a Saturday morning staple right alongside my favorite cup of kona coffee. I was happy and relieved that this recipe worked.

This recipe is a much more nutritious option than traditional pancakes even if you are not following a Paleo diet. The ingredients are simply healthier. It is also a kid friendly, healthy breakfast that provides them with a little extra nutrition to start their day.

Paleo pancakes are definitely quite different than regular pancakes. They are more dense and nuttier but they really are delicious. While you may still dream about a fluffy and light, regular pancake, this paleo pancake recipe will satisfy that craving and also remind you of the great lifestyle change that you have made.

Amazing pancakes that are completely Paleo friendly!

Ingredients

  • 1 ¾ cup almond flour
  • 2 eggs, whisked
  • ½ teaspoon salt
  • 1 teaspoon vanilla
  • ½ teaspoon cinnamon
  • ¼ teaspoon Nutmeg
  • 1 cup almond milk (or water!)

Instructions

  1. Whisk the eggs in a small mixing bowl. Add almond flour, salt, cinnamon, nutmeg, and vanilla. Add almond milk (or water) and stir (or whisk) until combined.
  2. In the meantime, heat skillet to medium-high. Scoop of the batter at a time onto skillet leaving enough space between pancakes to flip them. Cook for about 2 minutes on the first side, flip, and cook for about 2 minutes on the other side.
  3. Remove pancakes from skillet and top with your choice of toppings. Serve immediately.

Notes
