This recipe gives you flavor-packed elements to ensure your lamb turns out delicious. As a plus, this recipe makes the lamb rack the star of the meal!

All you'll need is some couscous or orzo and some grilled veggies on the side, and you are all set. I recommend serving on a large platter like this one I found on Amazon - it will totally impress all of your guests!

Or you could serve some crispy chickpeas on the side. Some sprinkled feta over everything sounds delicious, too!

The marinade will take some time - but that added time lets the lamb soak up olive oil, garlic, and all of the herby goodness that will make your lamb so flavorful.

About the Recipe

This recipe inspiration came from a beautiful rack of lamb that was on sale at Costco. I saw it and just couldn't pass it up!

I wanted delicious garlic and herb flavors on this rack of lamb, so I decided that marinating it would lock in those flavors!

Once you combine your marinate ingredients, add in your rack of lamb and let marinate for one hour or at least one day.

Once it's marinated, cook for at least 6 minutes with the meat side down. Then, flip and let the other side cook for 3 minutes. Finally, flip once more and turn heat to very low, and let lamb sit for at least 20 minutes.

The end result is a delicious and juicy rack of lamb that is sure to impress your friends and family!

Ingredients

  • ¼ cup olive oil
  • 1 tbsp chopped rosemary
  • 1 tsp chopped dill
  • 3 garlic cloves chopped
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 1 rack of lamb

Instructions

  • Combine ingredients in a large plastic bag. Marinate lamb for one hour up to one day. After marinating, let sit at room temp for at least 20 minutes before you grill. Meanwhile, heat up the grill.

  • Grill for 6 minutes with the meat side down. Then, flip over and grill 3 minutes with the fat side down.

  • Next, flip once more to meat side down, then turn heat to low. Let lamb rack sit for 10 minutes on low heat. Remove from grill and set rest for at least 10 minutes. Note: this is for medium rare-medium doneness. If in doubt, check temperature using an instant thermometer and cook longer if needed.

  • Slice lamb and serve!
