Some of you may remember that I declared this summer to be a “summer of drinks” a while back. I have so many ideas I want to share with you, and not as much time as I would like, but today I’m going to answer the question that everyone has been asking me ever since I started talking about homemade drinks:

Can you share a really good slushy iced coffee recipe?

Well my friends, the answer is yes. I have the trick to the best ever slushy iced coffee ever.

Actually, the secret to the best slushy iced coffee has been hiding in plain site since 2014, when I originally published my Iced Vanilla Latte recipe. I was going to re-share that original post across my social media, but decided to re-post, revamp, and discuss the trick a little more in depth.

So here it is: the secret to slushy iced coffee is instant pudding mix!

Yes, for real. Mixing the instant pudding mix into the coffee and milk mixture gives it a thick, gelled consistency. Once you add the ice and blend it up, the texture is the most perfect, creamy, delicious and refreshing iced coffee. Ever. (Plus the flavor of the pudding mix makes your drink extra delicious!)

In the recipe below, I use instant chocolate pudding mix, but you are welcome to play around with the flavor – use vanilla pudding mix or the flavor of your choice to alter the flavor of this drink. See below in the FAQ section for some other options!

Can I make this in a sugar-free/skinny version?

You sure can! Use diet or sugar-free instant pudding mix to keep it sugar free. Additionally, you can use skim milk, low fat milk or full fat milk to adjust the fat content.

Can I make this Slushy Iced Coffee ahead of time?

The best way to enjoy this drink is fresh. You can stick it in the freezer, where it will harden completely, then place it in the fridge for a while to slowly soften. It definitely won’t be quite the same as when it’s freshly made, but it will still be delicious!

How can I make this drink for shabbos?

This drinks is ideally enjoyed fresh. If you want to make it ahead of time for shabbos, see my response above about how to prepare this ahead of time.

Can I make this drink non-dairy?

You sure can! My choice of non-dairy milk substitutes is almond milk, but any alternative milk that you like will work well in this drink. Soy milk, oat milk, rice milk and any nut milk are all great options.

Can this drink be doubled?

The only limitation on this is the size of your blender! As long as the blender bowl is big enough, you’re welcome to double it. The recipe as written will yield two medium sized drinks. (The drink in the photo is a large size, and was more than half of the recipe.)

Do I need to use chocolate pudding mix or can I use a different flavor?

You can definitely use other flavors! I’ve done it with chocolate and vanilla pudding mix, but I am sure other flavors would be amazing as well. Any flavor that works well with the flavor of coffee will be great in this slushy iced coffee recipe.

Are there things I can add to give the drink extra flavor?

For sure! You can add a dollop of chocolate hazelnut spread (such as nutella), a scoop of caramel cream or dulce de leche, a spoonful or two of lotus spread, just to name a few. Simply blend it in with the coffee and pudding mixture and enjoy!

Do I need an expensive blender such as a vitamix or blendtec to get great results?

Absolutely not! The drink you see in the photo? That was made in my $12 walmart blender. I got it about 5 years ago (thinking I would soon replace it!) and it worked just fine! The trick to this recipe is the combination of ingredients, specifically the instant pudding mix, not the blender you use!

That being said, if you’re using a cheap blender, like mine, you may want to blend it for an extra minute or two to make sure it’s really fully blended and creamy. If you’re not sure if it’s blended well enough, keep going!

Can I add any garnishes to this recipe?

Of course you can! Drizzle chocolate or caramel sauce around the cup before adding your iced coffee to it. You can also top the cup with a bunch of whipped cream. Some other toppings you can add on top of the whipped cream are chocolate sauce, caramel sauce, chopped oreo style cookies, chocolate shavings, sprinkles, or any other toppings you like! You can also rim the glass by dipping it into corn syrup to act as the “glue,” then into chocolate cookie crumbs or your choice of crumbs.

The Best Slushy Iced Coffee Recipe

Yield: 2 servings

Prep Time: 5 minutes

Total Time: 5 minutes

Ingredients

  • 2 Tablespoons instant coffee granules
  • 2 Tablespoons Instant Chocolate Pudding Mix (regular or sugar-free/diet)
  • 1 Tablespoon cocoa powder (optional)
  • 1-2 Tablespoons sugar or sweetener, optional, to taste
  • 1/2 cup boiling water
  • 1 cup milk
  • 2 heaping cups ice
  • whipped cream, optional, for topping
  • chocolate syrup, optional, for topping

Instructions

  1. Combine coffee, pudding mix, cocoa (if using), sugar (if using), and boiling water in a small bowl or a cup. Stir to combine. The mixture will be thick and pudding-like.
  2. Add mixture to a blender. Add milk, followed by the ice.
  3. Turn blender on and blend until combined and creamy.
  4. Serve immediately. If desired, top with whipped cream and/or chocolate syrup.

Notes

The cocoa adds a delicious chocolate flavor to your drink, but it also adds bitterness. If adding the cocoa, you're best off adding some additional sweetener. Start with 1 tablespoon, then blend and taste. You can always add more as needed!

If you're making a flavor other than chocolate, you can skip the cocoa (and therefor the additional sweetener) entirely.
